Mango Falooda Recipe | Mango Dessert Recipes

Mango Falooda recipe with step by step photos.I was introduced to Falooda only in Mumbai.It had almost become a norm for me to have it in the famous shop Badshah on my every visit to crawford market. I love their rose falooda the most and I do not miss the mango falooda during mango season and order Kesar falooda too at times.One has an option of having 1/2 falooda and the portion they used to serve as half itself was so heavy for one person.

Rose falooda is the classic version of falooda and it is a medley of rose syrup , basil seeds , cold rose milk,falooda sev and ice cream.Rose syrup adds a nice flavor to the falooda and basil seeds cool the body in summers.Coming to Mango falooda recipe, the combination of mango puree ,cut mango cubes,mango ice cream in sweetened milk,falooda sev and basil seeds flavored with rose syrup and topped with nuts and tutti frutti which adds a nice bite to it, how can something like this go wrong?I would say that it is the utmost mango delicacy in one glass, it tastes amazing. Do not miss to try this simple and delicious mango falooda recipe this summer and before the mango season ends.More over one can do all the prep work ahead and just assemble it in 5 mins when you have guests,I am sure they would be bowled over with this Mango falooda.

Here is how to make mango falooda recipe with step by step photos.
Mango Falooda Recipe:

Serves 2 | Author: Prathibha
Prep time: 25 mins | Cooking time: 5 mins | Total time: 30 mins

Ingredients:
1 large ripen Mango,chopped(alphonso or kesar)
1 cup Milk,boiled and cooled
1.5-2 tbsp Sugar
1/2 cup Vermicelli/Falooda sev
4 scoops Mango Ice cream/Vanilla Ice cream
2.5 tbsp Basil seeds(sabja seeds)
2-3 tbsp Rose syrup
2 tbsp chopped Cashewnuts
1 tbsp Tutti Frutti
2 glazed Cherries,to garnish 
1/3 cup Jelly,cut into cubes(optional)

Method:
  • Wash,peel and chop the mango into pieces.Reserve 1/3 cup of mango pieces and grind the rest to a smooth puree.Refrigerate it until it's usage.
  • Slightly dry roast vermicelli taking care that it does not change color and add water to it and cook until done and strain the cooked vermicelli and pour cold water on it,this ensures that the cooked vermicelli stay separate.If you are using falooda sev cook it as per the instructions.Chill it until its use.
  • Soak basil seeds in 1/2 cup water for half an hour or until it swell up nicely.
  • If you are using jelly,prepare it as per the instructions and let it set and cut it into cubes and keep it ready.
  • Boil milk and mix in the sugar and let it cool and refrigerate it until it is chilled.
  • Now take two tall serving glasses and pour 1-1.5 tbsp of Rose syrup in each glass and then add 1 tbsp of swollen basil seeds on it.
  • Add some mango cubes and jelly cubes (if using) and then add 3-4 tbsp of cooked falooda sev/vermicelli in both the glasses.
  • Now add few more mango cubes and swollen basil seeds and then add 4-5 tbsp of mango puree in both the glasses.
  • Now gently pour sweetened milk into the glass until the desired level and then add some more tablespoons of mango puree on top in both the glasses.Keep enough space to add the ice cream, else the drink will over flow once you add ice cream to it.
  • Add 1-2 scoops of Mango ice cream(or vanilla ice cream) and garnish it with chopped cashewnuts, tutti frutti, chopped mango pieces and a glazed cherry on top in both the glasses.
Serve immediately with long spoon and straw and enjoy!!

Notes:
  1. One can prepare the mango falooda according to their personal choice, there are no hard and fast rules while making it.
  2. I sometimes like to add mango milkshake instead of mango puree and milk separately, this actually keeps it thick.
  3. The addition of rose syrup is optional, if you do not have it skip it totally or use roohafza instead.
  4. You can use ready made/tinned mango puree when mangoes are not in season and skip mango pieces in the recipe and follow the same recipe.
  5. I love to add mango ice cream to the mango falooda but one can add simple vanilla ice cream to it and enjoy.
  6. Mangoes like alphonsos and kesar are best for this recipe, but one can use their locally grown sweet mango variety to prepare this recipe.You can add sugar while grinding the mango if your mango is not very sweet.

Gulkand Ice Cream Recipe | Eggless Ice Cream Recipes

Gulkand Ice cream recipe with step by step photos.Summers call for mocktails, fresh fruit juices. popsicles, ice creams and kulfis to beat the heat. I am not an Ice cream lover though I would like to eat them once in a while and I prefer Kulfi to Ice cream any day.But TH is very fond of Ice creams and he always buy a small ice cream tub or a cone or at least an ice cream bar when he accompanies me for shopping.

Though I prepare Mango Ice cream and Mango Kulfi  without fail every mango season I never ventured out to try other icecream flavors at home back in India.But after shifting to Singapore we miss having those Indian Ice cream flavors and hence I made this Gulkand Ice cream recently and TH loved it to the core and finished the box even before I realized.So, this time I decided to blog about it before it gets disappeared again in my refrigerator.

I am posting a very simple eggless and no churn gulkand ice cream recipe which I prepared following my basic Ice cream recipe.I use the same Ice cream base to prepare the Mango Ice cream and it turns quite creamy and delicious.Following the same base one can prepare various flavors like Chocolate, Pistachio, Butterscotch,Strawberry, Mixed berry, Paan etc.I hope I will try other flavors and post them in my blog at least in near future,till then enjoy my easy home made gulkand ice cream.

Here is how to prepare Gulkand Ice cream recipe with step by step photos:
Eggless Gulkand Ice Cream Recipe:
yields: 12-15 scoops | Author: Prathibha
Prep time: 20 mins | Cooking time: NIL | Total time: 20 mins + freezing time
Cuisine: Indian | Category: Desserts/Ice Creams

Ingredients:
2 cups heavy Whipping Cream,chilled
1/2 cup full cream Milk,boiled and cooled
1/2 cup Condensed milk
5-6 tbsp Gulkand/Rose petal jam
few drops of rose essence,optional

Method:
  • Chill a large bowl with the beating blades in the freezer for an hour or two.
  • Reserve 2 tbsp of Gulkand and grind 1/4 cup Gulkand with full cream milk to a smooth puree.
  • Pour the heavy whipping cream to the chilled bowl and whisk it with the electric whisker until it forms soft peaks.
  • Add condensed milk, rose essence(if using),ground gulkand puree and reserved gulkand to the whipped cream and gently fold it until the mixture is uniform.You can even use the electric whisker but I prefer to fold to maintain the creaminess of ice cream.You can taste the mixture at this point and add more condensed milk if you need.
  • Pour it into a freezer safe box and cover it with lid tightly and freeze it for 7-8 hours until it is set.
Scoop it and serve.

Notes:
  1. This ice cream is set at once and hence try to whip the cream until soft peaks and fold the rest of the ingredients into the whipped cream gently whip helps in getting a creamy ice cream.
  2. You can even use rose syrup while mixing the ingredients which helps in giving a nice rose colored ice cream.As I did not have it I have not used it.
  3. Also adding rose essence gives a nice flavor to the ice cream, do not skip it.
  4. You can add sugar instead of condensed milk but I prefer the condensed milk as it gives nice creaminess to ice creams.

Watermelon Lemonade | Easy Drinks Recipes

I hope everyone had a wonderful Diwali. After all the festival recipes I wanted to post something simple and hence posting this simple watermelon lemonade recipe.
Watermelon is easily available through out the year these days and I like this fruit very much.I usually prefer to eat the fruit as such instead of juice but during summer I prefer to have a glass of chilled fresh juice.We can play with various ingredients and create different flavored juices and mocktail recipes.Lemonade is a simple variation to a juice where lemon is added for extra punch and the most popular fruit lemonades are the Classic Lemonade, Strawberry Lemonade, Mango Lemonade, Watermelon lemonade, Peach Lemonade and also there are few variations using various herbs.

Watermelon Lemonade | Watermelon Ginger Lemonade Recipe:
Serves 4
Prep time: 10 mins | Cooking time : 5 mins | Total time: 15 mins

Ingredients:
3 cups Watermelon,chopped and seeded
juice of 2 Lemons
1/2" Ginger,grated (optional)
2 - 2.5 cups Cold Water or Soda
Ice cubes, to serve

for sugar syrup:
1/4 cup Sugar
1/4 cup Water

Method:
to prepare sugar syrup:
  • In a vessel boil water and sugar together until you get a slight sticky syrup and leave it aside to cool completely.You can prepare this ahead and refrigerate it and use it when required,it stays good for a month.
to prepare Lemonade:
  • Blend watermelon pieces with grated ginger to a smooth juice consistency and strain it through a metal strainer.
  • Add lemon juice and enough cooled sugar syrup(3-4 tbsp)to it and thin it down with water or soda.Taste the juice at this point and adjust it accordingly.The addition of soda adds up a nice spritzy version to it.
Serve it with ice cubes.You can even garnish with thin lemon or watermelon slices or mint leaves.

Notes:
  1. You can prepare the sugar syrup ahead and keep it handy to prepare these kind of juices and mocktails during summers.
  2. You can avoid ginger in the recipe but it adds a nice punch to the juice.But one can avoid if you want a simple lemonade.
  3. You can even add kalanamak and chaat masala to it to make it more interesting.You can play around with the ingredients to suit your taste buds.

Sweet Lassi Recipe | Punjabi Lassi

Lassi is one of the most popular drink recipe in India and Punjabi Lassi is known for its rich,creamy taste.Lassi could be prepared either sweet or salted and I absolutely love both the versions. Mostly I prepare either Salted Lassi or Chaas but I do prepare Sweet Lassi once in a while to treat ourselves with the luscious thick creamy drink.This sweet lassi is even ideal to drink during Navratri fast to keep you fill for long time. In Punjab,Sweet Lassi is prepared very thick and is topped with white butter or malai and is served in tall glasses.One glass of lassi is good enough to fill your tummy and can skip a meal easily. In summer season it is a treat definitely but one can prepare it any time round the year. You can prepare various fruit lassis like Mango Lassi and Strawberry Lassi during their respective seasons.

I used to flavour my Lassi with Roohafza during my child hood and love that flavor a lot, if you have not tried that flavour please do try, you will definitely love it. Traditionally Lassi is prepared with hand by using the wooden whisk but it is a bit time consuming process. If you want you can try that or just blend it in the mixer which is the most easiest way.

Punjabi Lassi | Sweet Lassi Recipe:
Serves 2
Prep time:5 mins | Cooking time:nil : Total time:5 mins
Cuisine: Punjabi - Indian | Category: Beverages

Ingredients:
1 1/2 cups fresh thick creamy Curd/Yogurt,chilled
1/2 cup Milk,chilled
1/4 cup chilled Water
2-3 tbsp Sugar
1 cardamom,crushed(only the seeds)
2-3 Ice cubes(optional)
1 tbsp Malai/fresh cream,to top(optional)

Method:
  • In a juicer/mixer blend curd with milk, water, sugar and cardamom powder until it becomes frothy. Do not blend for long otherwise it will form butter on top. You can do this process in a traditional way of whisking it with the wooden whisk.
  • Check the sweetness and add more sugar if needed. Also adjust the consistency by adding more curd/milk to suit your taste buds.
Serve it in a glass topped with cream and ice cubes. I did not add in mine. I just garnished with cardamom powder and few saffron strands.

Notes:
  1. You can add kewra water or rose water for a nice and distinct flavour. 
  2. I sometimes add 2-3 tbsp of Roohafza while blending and it is my favourite flavour for lassi.
  3. To prepare Saffron lassi add few saffron strands to milk and let it sit for some time and then blend along with the remaining ingredients.
  4. You can even add few thinly sliced almond pieces for a nice bite in lassi.
  5. Seasonal fruits like Mangoes or Strawberries can be added during their season to prepare Mango Lassi and Strawberry Lassi respectively.

Musk Melon Juice Recipe | Cantaloupe Juice | Easy Juice Recipes

I prefer Milkshakes over fresh fruit juices as I like to eat the fruit in its whole form rather than having it as a juice. If we consume the fruit in its whole form, we don't need to add extra sugar nor do we lose any nutrients. There are many people who prefer having juices though and even DH falls under that category. So sometimes I prepare fresh fruit juices for him and that also gives me an opportunity to click the pics.

Muskmelon used to be a famous local fruit in the place where I spent most of my childhood. It used to be very sweet and we always carried them to our native place as my grand mom used to like this variety very much.While 90% of the fruits used to be consumed directly the rest which could be either softened fruit or less sweetened ones used to get converted in this juice form. There is no specific recipe as such but just wanted to highlight it for those who are looking for the recipe.

I must admit that I am very bad in clicking pics of beverages and I always find them challenging to click as the angles are a bit difficult to capture.I have hence been experimenting quite a bit with clicking juices for two reasons - to improve my photography skills and also that they can make their way to my blog. In this juice, I had tried to give the froth by pouring the juice in different glasses so that it can hold the muskmelon balls.On another note,recently I tried foodpanda.in online portal when I came back home after exhaustive shopping and was completely tired to cook anything.They had various range of restaurants and also categorized according to the area which helped me to choose the restaurant and cuisine easily and I was very happy with their services and I recommend you to try it if you have not done before.

Muskmelon Juice | Kharbuja JuiceRecipe:
Serves 2
Prep time: 5 mins | Blending time: 2 mins | Total time: 7-8 mins

Ingredients:
2 cups chopped ripen Muskmelon
1 tsp Lemon Juice(optional)
1/2 cup chilled Water
2-3 tsp Sugar
Ice cubes, to serve(optional)

Method:
  • Cut the musk melon into two halves and remove the seeds and cut the muskmelon into pieces by removing the external hard layer.
  • In a blender add chopped muskmelon, chilled water and sugar and blend it to a thick pulpy juice. Taste the juice and add more sugar if needed.
  • Add lemon juice and stir it nicely.
  • You can strain the juice or serve it as it is.I suggest you to serve as it is to retain the nutrients of fruit.
  • Pour it into 2 individual glasses.
Add ice cubes and serve it immediately.

Notes:
  1. Adjust the sugar and consistency of juice according to your your wish.
  2. I usually do not strain the fresh fruit juices to retain the fiber and nutrients of the fruits. If you want you can strain it in a metal sieve.
  3. You can experiment it by combining mixed fruits combinations with various fruits like pomegranate, orange, sweet lime, watermelon etc.
  4. If you like you can make it a thick milkshake by adding milk instead of water in the recipe.

Watermelon Juice | Easy Drinks Recipes

I usually prefer eating whole fruit rather then preparing juices and that's the reason I don't have many juice posts in my space. Moreover juices are simple to prepare so posting recipes of fresh juices may not be required but according to me, a juice can be prepared with several variations and hence am posting one such recipe today. Look out for the finer points in the notes section.

I usually prefer milkshakes to juices but a few fruit varieties are not suitable to prepare milkshakes and tastes best in the form of juice. Watermelon belongs to this category and as it has high water content one can eat it as it is or turn it into juice. I have been planning to post water melon juice from a long time as the colour of watermelon juice is captivating and appetizing!! But to my bad luck, the day I had planned to take pics, the weather was very gloomy and made me struggle to capture this gorgeous juice. I am not very happy with the clicks and did not meet any expectations from what I had actually thought in my mind, anyways would like to capture more juices in future to bring those bright colourful juice recipes in my blog.

Watermelon Juice Recipe:
Yields 2-3 glasses
Prep time:10 mins | Grinding time:2 mins | Total time:12 mins

Ingredients:
3 cups Watermelon, diced and seeded
2-3 tbsp Sugar, to taste
1/2- 3/4 cup chilled Water roughly
Ice cubes, to serve(optional)
 
Method:
  • Cut the watermelon and remove the seeds. I do not prefer ice hence I avoid it and refrigerate watermelon pieces for some time.
  • Blend the watermelon pieces with sugar and water to a smooth juice. Do not add water at one shot, add it in intervals  and also according to you required consistency. Now taste it and add more sugar if needed. Strain the juice.
Serve it by adding ice cubes.

Notes:
  1. This is a very basic water melon juice recipe with out any flavours. If you like you can add 1-2 tsp lemon juice or 1 tsp chopped ginger while grinding it for extra punch.
  2. You can even freeze watermelon cubes and blend it with sugar like a smoothie.
  3. Various fruits like pomegranate, oranges, mosambi(sweet lime) and grapes can be combined with water melon.
  4. Sugar can be replaced with honey in the recipe.
  5. You can also prepare with out sugar by adding mint leaves, chaat masala, kala namak and roasted cumin powder for a more chatpata juice.

Mango Banana Smoothie | Easy Smoothie Recipes

I have posted mango recipes non stop from the last 2 weeks and I hope this would be the last recipe for this mango season unless I prepare something new.Hope you liked my mango recipes and did not get bored of them .Check out my complete list of Mango recipes here.
Smoothies are one of the easiest breakfast option but somehow I am not a person who can live on smoothie for breakfast.But it is a different story all together during the mango season.I do not mind having smoothies for breakfast everyday provided the smoothie has mango in it.Mango can be paired with various fruits like Mango-Banana,Mango-Strawberry,Mango-Papaya etc and my most favorite combination is Mango-Banana which works well for a Smoothie.
Smoothies are very versatile,you can add cornflakes or oats to the smoothie while blending and convert a simple smoothie to a wholesome breakfast.Some times I even add dry fruits like cashew nuts or almonds or figs or dates as it adds a nice nutty taste to the smoothie.

Mango Banana Smoothie Recipe:
serves 2
Prep time:10 mins | Cook time: nil | Total time: 10 mins

Ingredients:
1 ripen Mango(Alphonso/Kesar or similar variety)
1 big ripen Banana
2 tbsp Sugar or honey *
1/4 cup cold Milk *
few Ice cubes,to blend and serve

Method:
  • Remove the skin and cut the mango and banana into pieces.
  • In a mixer/blender add mango and banana pieces,ice cubes,sugar(or honey) and milk and blend into a smooth puree.Check the sweetness and if needed add extra sugar.
  • If you want you can add more milk to make it bit thin and also adjust the sugar accordingly.
Serve the chilled mango banana smoothie immediately.You can even top them with ice cubes during serving it.

Notes:
  1. Sugar or honey should be adjusted according to the sweetness of mango and to your desired sweetness.
  2. Milk also is to be adjusted according to your desired thickness.
  3. You can choose the mango varieties like alphonso,kesar,badam,raspuri which tastes best for this smoothie.
  4. You can even add oats or corn flakes while blending the smoothie for a wholesome breakfast.
  5. You can also add nuts like cashew nuts or almonds while blending for a rich and nutty smoothie.

Mango Shrikand | Amrakhand | Aamkhand Recipe

One can prepare several desserts with mango ranging from a simple Aamras, Kulfi  to Ice-Cream, Cheesecakes, Souffles etc and of course everything tastes nice -how can a dessert go wrong with mangoes right?? This year I enjoyed the mango season thoroughly.Though I prefer to eat the whole fruit most of the time followed by Mango Kulfi,I prepared few recipes using mangoes so that they can make their way to my blog.

Mango Shrikand is another version of Shrikand prepared in mango season.Mango Shrikand is also known as Amarakhand or Aamkhand,is a popular dessert in Maharashtra and is usually served with Poori.Though we get Amrakhand  easily in the market, I usually do not buy it, as I find it too sweet for my taste buds and I prefer a home made version of it where I can reduce the sweetness.I like Amrakhand mildly sweet with lot of chopped nuts.

Mango Shrikand | Amarakhand Recipe:
Serves 4-5
Prep time: 15 mins | Cooking time: nil | Total time:15 mins + straining time
Recipe Cuisine: Indian | Recipe Category: Desserts

Ingredients:
2 ripen Alphonso Mangoes(or kesar)
1/2 liter fresh Curd(prepared with whole cream milk)
1/3 cup Sugar
1/4 tsp Cardamom powder
2 tbsp chopped nuts(almonds,pistachios)
few Saffron strands

Method:
  • Place a thin muslin cloth on a strainer and pour the curd over it and loosely cover it with the edges of the cloth.Fit the strainer into a clean vessel so that it will collect the whey from the curd.Refrigerate this and let the curd sit in the strainer overnight or for a minimum of 4-5 hrs. You can even hang the curd in a muslin cloth outside but I prefer to refrigerate it as I do not like to turn it sour.The resultant hung curd should be really thick and creamy.
  • Wash and peel the skin of mangoes and cut into pieces.
  • In a blender add chopped mangoes,sugar and cardamom powder and blend to a fine puree.
  • Whisk the hung curd using a wire whisk until smooth.
  • Add the blended mango pulp to it and mix well.You can pass this mixture through a fine sieve to yield smooth shrikand,it is optional though.
  • Crush few saffron strands with your finger tips and add it and mix well.
  • Now check the sweetness and add more sugar if needed.
  • Refrigerate it for 1-2 hrs before serving.
Garnish it with finely chopped nuts and serve it with hot Puris or Chapati or as a dessert after your meal.

Notes:
  1. I usually prefer to use alphonsos for it,but you can even use kesar or any other sweet mango variety
  2. The addition of sugar depends on the sweetness of mangoes,so add accordingly.
  3. You can even add saffron while blending the mangoes.
  4. You can make it slightly rich by adding a couple of tbsp of condensed milk to it while mixing.Also reduce the sugar quantity accordingly.

Mango Thokku | Sweet and Spicy Mango Pickle

As promised in my Mango Pickle Post last week,I am posting the Mango Thokku recipe which is my favorite pickle from childhood.We call it as 'Noone Uragaya' at our place.This Mango Thokku(pickle) is a nice combo of flavors and tastes best when well balanced with the right amount of seasonings.My mom used to make a big bottle of this mango thokku as it goes well with Paniyaram, Akki roti, Ragi Rotti , Chakli, Murukku ,Thengolu and any roti,chakli and few breakfast varieties.

 Sweet and Spicy Mango Thokku Recipe:

 Shelf life: 1 year
 Prep time:15 mins | Cooking time:1.5 hrs | Total time: 2 hrs
 Cuisine: Indian Category: Pickles

 Ingredients:
 2 large Raw Sour Mangoes(weighs 1 kilo)
 150 gms (1 cup approx) Jaggery,grated
 1/3 cup Red chili powder 
 1 tbsp + 2 tsp Mustard seeds
 1 tbsp Fenugreek seeds
 1 tsp Turmeric powder
 1/4 tsp Asafoetida
 1/4 cup Salt,approx
 1 cup Sesame Oil

 Method:
  • Wash and wipe the mangoes with a dry cloth.Peel the skin of mango and cut the mango into very thin slices as shown in the picture.You would get roughly 5-6 cups of mango slices with a kilo of mangoes.

  • Dry roast 1 tbsp mustard seeds and fenugreek seeds separately until they turn fragrant and cool them and grind to a fine powder.
  • Heat oil in a thick large kadai and crackle 2 tsp mustard seeds and asafoetida. 

  • Add the thinly cut mango slices and fry them for 2-3 mins until the oil coats the mango slices.Continue frying them until the mango pieces start becoming soft,once it becomes soft add turmeric powder and grated jaggery to it and mix well.Let it cook on low flame for 15-20 mins until it forms a thick mass,keep stirring in between.

  • Add red chili powder,salt,roasted mustard-fenugreek powder to it and mix well.Taste the pickle a bit now and adjust the seasoning like salt, red chili powder or jaggery if necessary, it should be a good balance of salt, spicy, sour and sweetness.Let it cook for another 10-15 mins until the pickle forms like a big bowl and oil separates from the pickle.It starts leaving the pan with out sticking to it which is an indication that the pickle is done.You would see small mango bits in the pickle,but it is fine.

  • Let the pickle come to room temperature.
  • Store it in air tight sterilized bottles.It can be stored for an year under normal conditions if handled properly or you can even keep it in refrigerator and store it.
 Serve it with Khakras/ Roti/ Chapati/Paniyaram/ Thengolu/ Chakli/ Murukku/ Thalipeeth/ Akki roti/ Ragi Rotti.

Notes:
  1. Because of the addition of jaggery this pickle turns to dark brown in color.
  2. Always transfer a small portion of pickle into a small jar and use a clean and dry spoon.
  3. The most important part of the recipe is to balance the salt,spicy ness,and sweetness with the sourness of mangoes which makes a tasty pickle.Hence I suggest you to taste it once or twice after you add all the ingredients to the pickle and balance the pickle accordingly.
  4. This pickle would be sweet and spicy at the same time and goes well with Thengolu/ Chakli/ Murukku/ Thalipeeth/ Akki roti/ Ragi Rotti.
