Fried Gram Chutney | Roasted Chana dal Chutney | Putnala Pappu Pacchadi

Idli and Dosa are a part of menu in most of the south Indian house holds and it is always confusing to decide on the side dish that goes with the breakfast varieties. While the most popular chutneys are Hotel style Coconut chutney and Tomato Chutney, there are various other chutney varieties too which are prepared on the regular basis at my place. Today I am posting a very simple chutney variety - Fried gram chutney which is prepared in a similar way like coconut chutney but without or very little coconut being used in the recipe. You can also say this as a no coconut chutney as the coconut is optional in the recipe.My MIL prepares this chutney often just to avoid consuming more coconut as idli-dosa fare is almost an everyday affair at their place. So, this recipe is for those who wants a change from the regular coconut chutney or to avoid coconut in their chutney.

Fried(Roasted) Gram Chutney | Pottukadalai Chutney Recipe:
Serves 2-3 | Author: Prathibha
Prep time: 3 mins | Cooking time: 2 mins | Total time: 5 mins
Cuisine: South Indian | Category: Accompaniments- Chutney variety for Idli/Dosa

Ingredients:
1/2 cup Fried(Roasted) Gram/ Putnalapappu
1.5 tbsp fresh/frozen grated Coconut,optional
2 Green chilies
1-2 Garlic pods
a small marble sized Tamarind
Salt to taste

to temper:
1.5 tsp Ghee/Oil
1/2 tsp Mustard seeds
1/2 tsp Urad dal
5-6 Curry leaves
a pinch of Asafoetida

Method: 
  • Grind fried gram, coconut(if using), green chilies, garlic, tamarind and salt to a smooth paste by adding water little by little until you get the required consistency.Remove it to a serving bowl.
  • In a small tadka pan heat ghee(oil) and crackle mustard seeds and add urad dal and curry leaves and asafoetida and fry until the urad dal turns little red in color. 
  • Add the tempering to the prepared chutney and mix it nicely and cover it immediately to retain the flavors of the tempering.
Serve it with Idli/ Dosa/ Uthappam.

Notes:
  1. The addition of coconut is entirely optional but I recommend to use it.
  2. Garlic adds a nice flavor to the chutney, so do not skip it.
  3. You can make the chutney even with red chilies, in that case fry red chilies in little bit of oil and grind with the other ingredients.

Onion Chutney for Idli Dosa varieties

While Coconut chutney is the most preferred option for Idli and Dosa varieties at our place, at times I run out of coconut and so I do try preparing other kinds of chutneys at home. I have posted an Onion Chutney recipe earlier which is prepared with a combination of ground dry coconut and onion and is sautéed nicely- which helps to store it in refrigerator for up to a week. I just love having that chutney with various dishes like Billakudumulu(rice rava tikkis), Dosa or even Chapati. When I have small onions known as shallots at hand, I do not miss making this easy Onion chutney and also another version of raw onion chutney called "Ulli Karam", which I plan to post later.

Coming to today's post - Onion Chutney, it is a very simple chutney recipe which goes nicely with Idli and Dosa varieties. This recipe is very similar to my Tomato-Onion Chutney except that in this version, I avoided tomato and followed the same recipe. This chutney comes handy when we do not have any other ingredients for the usual chutneys as it has very basic ingredients which are available in our pantry always.

Onion Chutney for Idli/Dosa Varieties:
Serves 2-3
Prep time: 10 mins | Cooking time: 10 mins | Total time: 20 mins

Ingredients:
15-20 small Shallots or 2 Onions
4-5 Red chillies
2 tsp Urad dal
1/2 tsp Cumin seeds
3/4 tsp Tamarind Pulp
Salt to taste
1 tbsp. Oil

to temper:
1 tbsp. Oil/Ghee
1/2 tsp Mustard seed
a sprig of Curry leaves

Method:
  • Cut the ends of shallots and soak them in water for 10 mins. This helps to remove their skins very easily. Remove the skin of shallots and cut them into 2-3 pieces if they are bit large. If you are using regular onion, cut into medium chunks.
  • Heat 1/2 tsp oil and add cumin seeds, red chillies and urad dal and fry until urad dal changes its color to slight red and red chillies should turn dark brown in color, take care that you do not burn them. Remove it and keep it aside.
  • Heat remaining oil in the same pan and add shallots and fry them until they turn slight brown in color. This might take some 4-5 mins. Add soft tamarind at the end and mix well, if you are using tamarind pulp add it while grinding.Cool them a bit.
  • Grind roasted urad dal,red chllies and cumin seeds with salt to a coarse powder.
  • Add sautéed shallots(onion chunks) and tamarind pulp and grind it to a smooth or coarse chutney according to your preference. Add little water if required while grinding. Remove the chutney to a bowl.
  • In the same pan heat 1 tbsp. ghee/oil and crackle mustard seeds and add curry leaves and fry for some time and add this tempering to the chutney and mix well.
Serve it with Idli and Dosa varieties.
Notes:
  1. You can add 2-3 roughly chopped tomatoes and fry along with onions and grind together to make tomato-onion chutney.
  2. You can also 2-3 garlic pods while sautéing onions which adds a nice flavour to the chutney.

Tomato Kothimeera Pacchadi | Pacchadi Recipes

I am a big fan of Andhra style Pacchadis which is usually mixed with hot rice and ghee.Ideally Pacchadis are prepared in a stone mortar, as in the olden days and hence these kind of pacchadis are called 'Roti Pacchadis', where 'roti' stands for 'stone mortar' in telugu. Pacchadis can be prepared with various vegetables, greens and dals and the texture should be very thick and slightly coarse unlike the chutneys we prepare for the breakfast items. Today I am sharing a simple Pacchadi recipe with Tomatoes and coriander - Tomato Kothimeera Pacchadi which serves as a nice combination with rice.

Tomato Kothimeera Pacchadi | Tomato Coriander Chutney for Rice:
Serves 4-5
Prep time:10 mins | Cooking time:15 mins | Total time: 25 mins

Ingredients:
3-4 large ripen Tomatoes,roughly chopped
a small bunch of Coriander leaves(roughly 1.5 cups)
2 tbsp Urad dal
1 tsp Cumin seeds
5-6 Red chillies
a small cherry size Tamarind
Salt to taste
1 tbsp Oil

to temper:
1 tsp Oil/Ghee
1/2 tsp Mustard seeds
1 tsp Urad dal
a sprig of Curry leaves
1 Red chili,broken
a pinch of Asafoetida

Method:
  • Clean the coriander leaves and retain tender stems along with the leaves and chop it roughly.
  • Heat oil in a pan/kadai and add urad dal and roast until it turns slight red in color.Remove and keep the urad dal aside.
  • In the same pan add cumin seeds and red chillies and fry them until they are roasted and remove them aside.
  • Now in the same pan add chopped tomatoes and fry for a minute and cover it and cook until it turns pulpy.It takes 4-5 mins.
  • Add chopped coriander leaves along with the tender stems and tamarind to it and fry for another 3-4 mins until the mixture becomes slightly dry.Cool the mixture slightly.
  • Grind roasted urad dal with roasted red chillies,cumin seeds and salt to a coarse powder.Add cooled tomato - coriander mixture and grind it to a coarse paste.I usually do it in whipper mode to get slight coarse and pulpy pacchadi.
  • Heat oil/ghee in a small tempering pan and crackle mustard seeds and add urad dal and red chillies,curry leaves and asafoetida and fry until they wilt and add this tempering to the pacchadi.
Serve it with hot steamed rice and ghee.

Notes:
  1. You can store it in refrigerator for 2-3 days in an air tight container.
  2. If you are preparing this chutney for Idli or Dosa,grind the chutney to a smooth paste instead of coarse paste.
  3. If you find the pacchadi very tangy add a pinch of sugar or jaggery while grinding the chutney.

Raw Onion Chutney | Ulli Karam for Idli and Dosa

How many of you like raw Onions? I am sure that there would be a mixed bunch of people who likes it and who do not like it. I like to eat a slice or two of raw onions along with rice for my lunch or in salads. Raw onions taste best with podi varieties and pacchadi varieties when mixed with rice, it is a must to add raw onions to the pacchadi varieties like Chintakaya Pacchadi , Gongura Pacchadi etc. My MIL makes this Ulli Karam to go with Idli and Dosa varieties  but she makes sure that she has another accompaniment option like sambar or any other chutney variety along with Ulli karam. The reason being simple is this is a raw chutney strongly flavored with raw onions and hence you need another accompaniment to go with to nullify the strong taste of onions. The key taste for this chutney is in the way it is ground, it tastes nice when prepared chunky instead of smooth paste.This chutney tastes best when it is made super spicy and also one needs to add liberal amount of sesame oil or melted ghee to it. You can even spread this chutney in dosa once it is done, it tastes delicious too.

Raw Onion Chutney | Ullipaya Karam Recipe:
Serves 2-3
Total Prep time:10 mins | Cooking time: NIL
Cuisine: South Indian | Category: Chutney for Idli/Dosa - Accompaniments

Ingredients:
20-25 small Shallots or 2 Onions
4-5 Green Chillies
1/2 cup tightly packed Coriander leaves
1 tsp Tamarind Pulp
Salt to taste
1-2 tbsp Sesame Oil/ melted Ghee

Method:
  • Cut the ends of shallots and soak them in a bowl of water for 10 mins. This will make the process of peeling the skin of onions easier. Peel the skins and keep them ready, if the shallots are big cut them into 2-3 pieces. If you are using large onions peel and cut them into chunks roughly.
  • Wash and remove the hard stems of coriander and roughly chop the coriander and green chillies.
  • In a blender add shallots, chopped green chillies, coriander, tamarind pulp and salt and pulse it in whipper mode to get a coarse chutney. Do not grind it longer, just pulse it until you get chunky chutney as shown. You do not require any water, if required add a tbsp of water while grinding.
  • Remove the chutney to a bowl and add sesame oil or melted ghee and mix it nicely.
Serve it with Idli and Dosa varieties along with Sambar. You can even spread this chutney in the dosa once it is done, it tastes delicious too!!

Notes:
  1. Shallots are preferred over onions for this recipe. If you do not have shallots you can use onions instead.
  2. This chutney tastes best when made it spicy, so adjust the spiciness as required.
  3. As this is raw onion chutney the flavor of onions is strong and it can be subsided slightly by the addition of liberal amount of sesame oil and ghee.However I suggest you to serve it along with Sambar or any other chutney.
  4. You can replace green chillies with soaked red chillies or red chili powder in the recipe and you can add the tempering of mustard seeds to it at the end.
  5. You can add few curry leaves(4-5 leaves) while grinding which adds a different flavor to the chutney.But do not add more curry leaves.

Tomato Chutney Recipe | Easy Chutney Varieties for Idli/Dosa

Tomato chutney is one of the easiest options for Idli and Dosa varieties and also is a nice change from regular Coconut Chutney. I have posted earlier a version of Tomato-Onion chutney and I am posting a simple and easy version of Tomato chutney today. It is very tangy and tastes delicious with Idli and Dosa or other Breakfast varieties.

Tomato Chutney for Idli/Dosa Varieties:
Serves 2-3
Prep time: 10 mins | Cooking time: 10 mins | Total time: 20 mins

Ingredients:
3-4 Tomatoes, roughly chopped
2-3 Garlic pods
4-5 Green chillies
1 tsp Cumin seeds
1/2 tsp Tamarind Pulp
1 tsp Sugar/Jaggery
Salt to taste
1 tbsp. Oil

to temper:
1 tbsp. Oil/Ghee
1/2 tsp Mustard seed
1 tsp Urad dal
a sprig of Curry leaves
a pinch of Asafoetida

Method:
  • Heat 1/2 tsp oil and add cumin seeds, green chillies and garlic pods and fry the chillies wilt. Remove it and keep aside.
  • Heat remaining oil in the same pan and add chopped tomatoes and fry them until they turn pulpy. This might take some 4-5 mins. Add soft tamarind at the end and mix well, if you are using tamarind pulp add it while grinding. Cool it a bit.
  • Grind roasted garlic, green chillies and cumin seeds with salt to a coarse paste.
  • Add cooked mushy tomatoes, sugar(jaggery) and tamarind pulp and grind it to a smooth or chunky chutney according to your preference. Add little water if required while grinding. Remove the chutney to a bowl.
  • In the same pan heat 1 tbsp. ghee/oil and crackle mustard seeds and add urad dal, curry leaves and asafoetida and fry for some time and add this tempering to the chutney and mix well.
Serve it with Idli and Dosa varieties.

Notes:
  1. You can add 1 roughly chopped onion and fry along with tomatoes and grind together to make tomato-onion chutney.
  2. You can grind this chutney smooth or slightly chunky according to your preference.
  3. You can even add 1/2 cup- 3/4 cup of coriander leaves when you are frying tomatoes, it adds a nice flavour to the chutney.
  4. In case if you do not like smooth chutney you can also roast 2 tsp urad dal along with cumin seeds and grind it first before adding tomatoes, this adds some body to the chutney and also makes the texture different.
  5. As the tomatoes add sourness it is important to add some sugar or jaggery to balance the taste. If you like it sour you can avoid adding sugar.
  6. Green chillies can be replaced with red chillies in the recipe.

Capsicum Chutney | Chutney Recipes for Idli and Dosa

Most of the times Idli and Dosa would be accompanied with Coconut Chutney at my place as it is the most preferred chutney at home. However I do make variations for the regular coconut chutney like Red Coconut Chutney , Coconut Green chutney, Coconut chutney with Garlic, Coconut chutney with ginger etc. to give a twist each time so that we do not get bored. I do like other chutney varieties like Peanut Chutney, Onion Chutney, Tomato-Onion Chutney but DH is not very fond of them and he would prefer either Coconut chutney or Magaya Perugu Pacchadi . Apart from these chutneys one more chutney in common for both of us is this Capsicum chutney.

Capsicum chutney is a very simple and nice variation to regular chutney varieties. It does not need any coconut in the recipe. The addition of peanuts adds a nice taste where as capsicum gives a new flavour to the chutney. If you are bored of regular chutney varieties, try this capsicum chutney for a change to pair with your Idli and Dosa varieties. Capsicum Chutney Recipe:Serves 2-3
Pep time: 10 mins | Cooking time: 10 mins | Total time: 20 mins

Ingredients:
2 medium Green Capsicums, seeded and chopped
1 small Onion, chopped
1/4 cup Peanuts
2-3 Garlic pods
2-3 Green chillies
1-2 Red chillies
1 tsp Tamarind Pulp
Salt to taste
1 tbsp. Oil

to temper:
1 tbsp. Ghee/Oil
1/2 tsp Mustard seeds
1 tsp Urad dal
a sprig of Curry leaves
a pinch of Asafoetida

Method:
  • Dry roast ground nuts in a pan until the skin turns dark and remove them and let them cool. Remove the skin of ground nuts by rubbing them or keep the skips on if you wish.
  • Heat 1 tbsp. oil in a pan and add garlic pods, green chillies and red chillies and fry them until the chillies wilt and change their colour. Remove them and keep aside.
  • In the same pan add chopped onions and fry until they turn translucent and add chopped capsicum pieces and fry well until they wilt. It takes 4-5 mins roughly. Switch off the flame and let the mixture cool a bit. If you are using dry tamarind(mine is semi soft tamarind) add at this stage and mix in the mixture so that it will become soft.
  • Grind ground nuts with roasted green chillies, red chillies, garlic pods and salt to a coarse powder.
  • Add onion, capsicum and tamarind mixture and grind to a smooth or slightly coarse chutney in mixer. Remove the chutney into a bowl.
  • Heat oil/ghee in the same pan and crackle mustard seeds and then add urad dal, curry leaves and asafoetida and fry until the dal changes color and add this tempering to the chutney and mix well and cover it immediately.
Serve it with Idli and Dosa varieties.

Notes:
  1. You can use only green chillies or a combination of green and red chillies in the recipe.
  2. Green capsicum can be substituted with red capsicum in the recipe and also use red chillies instead of green chillies in the recipe.
  3. Adjust the spiciness according to your taste buds.
  4. I sometimes do not remove the skin of ground nuts, do not bother you would know about it once it is ground.

Totapuri Mango Chutney | Easy Chutney Recipes

Totapuri mango is one variety which can be eaten raw as it is slight sweet and sour in taste.It is usually sold in front of parks,schools etc where the vendors would drizzle a liberal amount of masala(salt,chili powder with a hint of sugar) on the mango pieces and I must say that the combination is a bliss!!I am sure many of you would agree.
In Bangalore, we get really good ones which tastes better than the ones we get in Mumbai.But when ever I find them in market I usually buy them to relish them raw with salt and chili powder or prepare this mango chutney or instant pickle.You can even use totapuri mangoes in salads,bhel puri etc.
Coming to today's post,this is a very simple and quick chutney made up of totapuri mangoes.Please make a note that you cannot substitute Totapuri mango with any other variety in this recipe.You can prepare this chutney in two ways - you can grind it in whipper mode to retain tiny bits of mango pieces or you can grind it into a smooth paste.It tastes good either ways.I like to prepare coarse chutney with mango pieces which is best suitable with Curd rice and I make it smooth if I want to use it as a dip or serve with any breakfast variety.This chutney is not suitable to mix with rice,if you want to prepare mango pacchadi for rice,check out my Mango-Coconut Pacchadi recipe which tastes best with rice.

Totapuri Mango Chutney Recipe:
shelf life: 3-4 days
Preparation time: 10 mins | Cooking time: nil | Total time: 10 mins

Ingredients:
1 Totapuri raw Mango
4-5 Green chillies
1 tsp Sugar
Salt to taste

to temper:
1 tsp Oil
1/2 tsp Mustard seeds
5-6 Curry leaves
a pinch of Asafoetida(strong rock variety)

Method:
  • Wash and peel the skin of mango and chop it into small pieces roughly.
  • Grind the mango pieces with green chillies,salt and sugar in the mixer to a coarse paste.Check the taste and adjust seasoning if required.Here you can grind it in two ways- you can grind it in whipper mode to retain tiny bits of mango pieces or you can grind it into a smooth paste with the addition of little water if needed.It tastes good either ways.
  • Heat oil in a small tempering pan and crackle mustard seeds and add curry leaves and asafoetida and switch off the flame.Add this tempering to the mango chutney.
Serve it as an accompaniment with khakras/rice/roti/ Curd rice/dosa/paniyaram etc.

Notes:
  1. Use only totapuri mango variety for this,other varieties would not suit for this chutney.
  2. This chutney is a nice blend of flavors,hence taste the chutney once when you grind and adjust the salt,sugar and spicyness of chutney.
  3. You can prepare the chutney in two ways- you can grind it in whipper mode to retain tiny bits of mango pieces or you can grind it into a smooth paste with the addition of little water if needed.It tastes good either ways.I like to prepare coarse chutney with mango pieces which is best suitable with curd rice and I make it smooth if I want to use it as a dip or serve with any breakfast variety.

Red Coconut Chutney | Side dish for Idli/Dosa

What to prepare as a Side dish for Idli/Dosa is always a confusion and since I get bored eating the same side dish again, I usually change the flavor and color of the chutney which makes it taste different every time.I have posted a version of Coconut chutney earlier, which is the usual way I prepare.I make various variations of this such as Red Coconut chutney and Green coconut chutney The addition of raw onion and garlic adds a nice flavor to the chutney and the addition of red chillies and byadige red chillies adds a bright red color to the chutney.

Red Coconut Chutney Recipe:
(serves 2-3)

Ingredients:
1/2 cup grated fresh Coconut
1 small Onion,chopped
2-3 dry Red Chillies
2-3 Byadige Red Chillies
2 small Garlic pods
2 tbsp Chana dal
1 1/2 tsp Tamarind pulp
Salt to taste

to temper:
2 tsp Ghee/Oil
1/2 tsp Mustard seeds
1 tsp Urad dal
a sprig of Curry leaves
a pinch of Asafoetida

Method:
  • Heat 1 tsp Oil and add chana dal and fry until they turn red in color and add red chillies and byadige red chillies until they are crisp and keep them aside.
  • Grind grated fresh coconut with onion, garlic pods, roasted chana dal and dry red chillies, tamarind pulp and salt to a paste.
  • Heat ghee/oil in a small tempering pan and crackle mustard seeds and add urad dal and fry until it turns red in color.Add curry leaves and asafoetida and fry it.
  • Add the tempering to the chutney and mix well.
Serve it with Idli/Dosa/Paniyaram.

Notes:
  1. Instead of chana dal you can add 3-4 tbsp fried gram(roasted gram) in the recipe.
  2. Adjust the red chillies according to your spice level.The addition of byadige red chillies gives a nice red color to the chutney,so do not miss adding them.

Mango Ginger Chutney | Mamidi Allam Pachadi | Maa Inji Thokku

When ever I see mango ginger(mamidi allam/maa inji) in the market I cannot resist myself without buying it.Both of us love the simple marinated version of pickle with it which goes very well with curd rice.This time I bought them in a larger quantity to make this chutney/thokku which can be preserved for longer and comes handy to serve with breakfast items like Idli/Dosa when we want.When needed we just need to mix water with the required amount of thokku to get the chutney consistency,it is ready to serve.

Mamidi Allam Niluva Pachadi | Ambe Haldi Chutney:

Ingredients:
250 gms Mango Ginger/Mamidi Allam
200-250 gms Tamarind
200-250 gms Jaggery,grated
3-4 tbsp Red chili powder
Salt to taste

to temper:
1/2 cup + 2 tbsp Oil
1 tsp Mustard seeds
a fat pinch of Asafoetida(hing)

Method:
  • Soak tamarind in little hot water until it softens.Let it cool completely.
  • Wash and scrape the skin of mango ginger and cut them into pieces roughly.
  • Grind mango ginger with tamarind,grated jaggery,red chili powder and salt to a fine paste.Do not add water while grinding,use little water in which the tamarind is soaked.
  • Check the taste now and adjust salt and chili powder if required.if you want it more tangy or more sweeter adjust the chutney as per your taste buds at this point.
  • Heat oil in a thick bottomed kadai and crackle mustard seeds and add asafoetida to it and add the ground mixture and fry it over low-medium flame until it leaves the oil in the edges.It takes 15-20 minutes approximately.The water content in the chutney/pickle should evaporate completely and the oil should float in the edges and top.This way the shelf life of the pickle would be longer.
  • Cool the pickle completely and store it in a glass bottle or air tight container.It stays up to an year if prepared carefully.
  • When required scoop out some portion and add a couple of tbsp of water to it and mix well.
Serve it with Idli/Dosa/Bajji/Punugulu/Bonda/Pesarattu/Gunta Ponganalu/Adai.You can even serve it with rice.

Notes:
  1. You can use regular ginger instead of mango ginger and follow the same recipe to make regular ginger pickle.It comes handy to serve with Idli,dosa and other breakfast varieties. 
  2. This pickle really tickles your taste buds as it is loaded with burst of flavors.
  3. Feel free to adjust the tangyness,sweetness,salt and spicyness according to your requirements after grinding the chutney.

Maagaya Perugu Pacchadi | Side dish for Idli/Dosa

I have posted many Andhra Mango pickle varieties this year and we have finished almost few of them to give room to our new pickle supplies which we will be receiving soon from my MIL.I have mentioned earlier many times that my MIL is an expert in making pickles and this year she promised me to get my favorite North Indian Vegetable Achar with the fresh winter vegetables and few other pickles.
Coming to today's post,this Maagaya perugu pacchadi is prepared using Maagaya pickle(Sun dried Mango Pickle),this recipe is a breeze to prepare if we have maagaya pickle in hand.This pairs nicely with Idli/Dosa or even with rice and many other breakfast varieties.A chutney cannot be simpler than this.If you have Maagaya pickle,do try this chutney for Idli/Dosa for a variation.
Maagaya Perugu Pacchadi | Magaya Chutney Recipe:

Ingredients:
1-2 Green chillies*
1/4 cup fresh Curd 
1 small Onion,finely chopped

to temper:
1 tsp Ghee/Oil
1/2 tsp mustard seeds
a sprig of Curry leaves

Method:
  • Grind magaya pickle with curd and green chillies to a smooth chutney.You can mix the pickle in the curd and mash it but I like a smooth chutney.
  • Mix in the finely chopped onion in the chutney and mxi well.
  • In a small pan heat oil and crackle mustard seeds and add curry leaves and fry well and add this tempering to the chutney.
Serve it with Idli/Dosa/Paniyaram and even plain steamed Rice.
Notes:
  1. Check the taste of maagaya pickle as it turns sour after a long time.If it is sour then add green chillies according to your spice level.If the magaya is spicy you don't need to add green chillies.
  2. You can store this in refrigerator for 2 days,if the onions are not mixed you can even store it for a week and add onions when required.
  3. You can even skip the onions and just mix maagaya with curd if you still want a quicker chutney.

Hotel Style COCONUT CHUTNEY | SIDE DISH FOR IDLI/DOSA

Coconut chutney is the most common and popular side dish for the south Indian breakfast items like Idli,Dosa and many other items.Though it is the most simple recipe,I thought of sharing my recipe for coconut chutney which tastes almost similar to the chutney we get in hotels.Most of us usually use ginger in the coconut chutney and I usually experiment with various additions like coriander,mint and curry leaves and sometimes few combinations of them in the coconut chutney.Even the color and flavor of coconut chutney depends on the ingredients used,I sometimes like to keep it just white and some times green and also you can even make a white chutney with green specs.If you alter the green chillies with red chillies,it will turn to red color chutney.Coconut chutney is really versatile and can be played with lot of ingredients.
Coming to today's post,I mentioned Hotel Style Coconut chutney because the outcome of this chutney tastes almost similar to the chutney which we get in hotels and the key ingredient here is the addition of few garlic pods in the recipe.The addition of few pods of garlic would add a nice flavor to the chutney.I have mentioned few more options in the notes and go through it before you make it.

Hotel Style Coconut Chutney | Kobbari Pacchadi Recipe:

Ingredients:
1 cup grated fresh Coconut
1/4 cup Fried gram/Dalia/Roasted gram
2 medium Garlic cloves(pods)
3-4 Green Chillies(adjust according to your spice level)
1/2 tsp Tamarind pulp
Salt to taste

to temper:
2 tsp Ghee/Oil
1/2 tsp Mustard seeds
1 tsp Urad dal
a sprig of Curry leaves
a small pinch of Asafoetida

Method:
  • Slightly warm the green chillies in an empty pan and also add fresh grated coconut and warm it for a minute.You do not need to fry the coconut or chillies completely.This process of warming up the coconut will make the chutney stay fresh for long even if it is kept outside.However this step is optional and you can skip warming the coconut and green chillies.
  • Grind grated coconut with fried gram,garlic pods,green chillies,tamarind pulp and salt to a coarse powder.
  • Add enough water and grind it to a thick and smooth(but slightly coarsely if you like)chutney.The consistency is completely left to your choice,we like it thick and slightly coarse.
  • Remove the chutney from the jar and collect it into a clean bowl.
  • Heat ghee/oil in a small tempering pan and crackle mustard seeds and add urad dal and fry until they turn slightly red.
  • Add curry leaves and asafoetida and give a swirl immediately and pour the tempering on to the chutney and cover it immediately with the lid.You can mix the tempering immediately or mix it just before serving it,but close the lid immediately to retain the fragrance of the tempering.
Serve it with Idli/Dosa/Pongal/Paniyaram.

Notes:
  1. As I mentioned in the method the process of warming up the coconut will make the chutney stay fresh for long even if it is kept outside,but it is optional.
  2. We like the chutney to be very thick and slightly coarse instead of a very smooth chutney.So prepare the chutney according to your requirements.
  3. The amount of green chillies depends on the spice level of individual preferences,so adjust it according to your requirements.
  4. Add less amount of tamarind in the chutney otherwise it makes the chutney quite tangy and spoils the taste.
  5. Do not add more cloves of garlic,it should give a hint of flavor of the chutney but should not over power the flavor.If you are using a big garlic pod,use just one.
  6. Tempering with ghee definitely adds nice flavor and taste to the chutney and is highly recommended by me.
Variations:
  1. You can add 1/2" ginger along with garlic pods while grinding.But I like the flavor of garlic alone in this chutney to get the typical hotel style chutney.
  2. You can replace green chillis with red chillies and also add a 1/2 small onion (or 4-5 shallots) while grinding the chutney which gives a red color hotel style chutney.

Brown Rice Dosa and Tomato Onion Chutney!!

Dosa,being the staple breakfast in many south Indian homes appears regularly on their breakfast menu.These days many people avoid eating them as it has large proportion of white rice which makes then feel it is bit unhealthy.For such kind of people brown rice is a nice and healthy substitute to the regular rice in making dosa.One need not to even compromise for the taste of dosa as I felt there is no major difference between the regular and brown rice dosa other than a slight dullness in the color of dosa because of the usage of brown rice.Though the calories,carbohydrate and protein contents are similar in both the rice varieties,brown rice has low glycemic index when compared to white rice and also it has required dietary minerals and vitamins which are essential for the body.As I have made my dosa healthier I had to even pick a low calorie side dish which goes with it other than the coconut chutney which is loaded with calories.So I made Tomato-Onion chutney to pair up with my healthy brown rice dosa.I make this tomato chutney very rarely as husband always prefers coconut chutney for idli and dosa and that is the reason it rarely appears on my menu,but I made this specifically to make this breakfast combo healthy.

Brown Rice Dosa:

Ingredients:
3 cups normal brown rice(I used sona masuri variety)
1 cup whole urad dal(skinless)
1 cup mix of toor dal,chana dal,moong dal (approx 1/3 cup each)
1 cup beaten rice(poha)
1 tsp methi seeds
salt to taste
oil/ghee to roast the dosa

Method:
  • Wash rice,dals and methi seeds all together for 2-3 times in running water and soak them for 6-8hrs or overnight.
  • Next day morning soak poha for an hour before starting the grinding process of the batter.
  • Grind everything together to a smooth paste in the wet grinder for better results.Add enough salt to the ground batter and mix well and let it ferment for 9-10 hrs at room temperature or keep it in hot oven in winters for speeding up the process of fermentation.
  • I am sure everyone knows how to make simple plain dosa,still I explain the process of making it for people who are not familiar with it.
  • Mix batter well.Pour a big ladle of batter onto a medium hot pan and spread it in the circular motion to form a uniform shaped dosa.
  • Pour 1 tbsp oil approx over it and cover it with a lid.(No need to add more oil if using Non stick pan,you can completely replace oil with ghee for better taste if you are not calorie conscious).
  • Let it initially cook on low flame for 1-2 mins and remove the lid and increase the flame later and cook for a couple of mins until you see brown/red patches.(No need to turn the dosa).But do not try to remove the dosa in between while it is roasting.We should remove it only when you are sure that the dosa is perfectly roasted.
  • Remove the lid and pour some ghee in the center and you can even close it from two sides or three sides like we get in hotels.
  • Brush the dosa with ghee and place it in the center of the pan to make it more crispier.How ever it is optional.
  • Serve it directly and do not drop them in hot boxes.It should be served on to the plate immediately to enjoy the flavor and crispiness of the dosa.
  • Reduce the flame for one minute and then start preparing the next dosa.Do not pour the batter on high flame.
Serve dosa with chutney of your choice like coconut chutney/groundnut chutney/mint chutney/tomato chutney/tomato onion chutney.I served dosa with tomato onion chutney.

Variations:
  1. Use regular white rice instead of brown rice to make regular plain dosa.
  2. Use your regular proportions for dosa like how you usually do and just replace white rice with equal quantities of brown rice.
  3. I add toor dal and chana dal sometimes to my dosa batter,but never added moong dal to the dosa batter,one of my friend recommended to use it so I thought of making an attempt and it turned pretty tasty though not much of difference.

Tomato Onion Chutney:

Ingredients:
2 large juicy tomatoes,chopped
1 large onion,chopped
2 tsp urad dal
1 tsp chana dal
4-5 red chillies
1/2 tsp tamarind pulp(if using hybrid tomatoes which are not much of sour)
salt to taste
2 tsp oil

for tadka:
1 tsp ghee
1/2 tsp mustard seeds
1 tsp urad dal
a sprig of curry leaves
a pinch of hing

Method:
  • Heat a tsp of oil and roast red chillies,chana dal and urad dal separately until brown and keep them aside.
  • Heat another tsp of oil in the same pan and fry onions until translucent and then add chopped tomatoes and fry until they are pulpy.Add a pinch of turmeric to it and tamarind(if using) and let it cook for few mins.Cool the mixture completely.
  • Grind the roasted dals,red chillies with salt to a fine powder and then add cooled onion-tomato mixture and grind to a slightly chunky paste.
  • Heat ghee in the same pan and crackle mustard seeds and add urad dal and curry leaves and fry until brown.Add a pinch of hing and pour this tadka over the chutney and give a nice stir.
Serve it with Idli/Dosa/Rice/Uttapam/Rotti etc.

Variations:
  1. You can use either chana dal or urad dal or combination of both in the above chutney.Everything tastes equally good with slight difference.
  2. You can even add a handful of coriander leaves while the tomatoes are being cooked to make it flavorful.
  3. If you like mint,you can even add a handful of mint leaves while the tomatoes are being cooked.
  4. You can make the chutney bit rich if you add a couple of tea spoons of grated fresh coconut while grinding the chutney.

Note:

  • For a Vegan version use only oil while frying as well as in chutney for seasoning.
