Rasmalai Recipe | How to make Rasmalai recipe

Easy Rasmalai recipe with step by step photos.Rasmalai or Rossomalai is a popular Bengali sweet apart from Rasgulla. Rasmalai is a popular dessert which takes its place in the menu for Weddings or for special occasions. Rasmalai is a soft and spongy flattened cottage cheese dumpling served in thickened milk known as 'Ras'.Rasmalai is a mildly sweetened dessert compared to other sweets and hence one can easily have a couple of them at one go and still not feel heavy too.

When I had made Rasgullas last time I had saved just a few to make rasmalai as it was a long due for me to post these recipes in my blog.You can check out the detailed process and preparation of Rasgullas with various tips and tricks in my blog here.Once you have rasgullas(either homemade or store-bought) making rasmalai at home is a breeze, though it needs occasional stirring in between.

I have used condensed milk to sweeten the ras(milk) and also added a couple of tablespoons of sugar but one can add only sugar to the recipe.The preparation process of ras(thickened milk) is very similar to Basundi or Rabdi just that we do not need to boil it for that long to get a very thick rabri kind but a slightly thickened milk.For a quicker version, one can more quantity of condensed milk and evaporated milk and store bought rasgullas for a quicker rasmalai.Today I am posting the traditional method of preparing Rasmalai at home.As Holi is around the corner,why not prepare this delicious rasmalai and treat your loved ones with a homemade delectable sweet.

Easy Rasmalai Recipe | Bengali Rossomalai:
Serves 4-5 | Author: Prathibha
Prep time: 10 mins | Cooking time: 30 mins | Total time: 40 mins
Cuisine: Bengali | Category: Sweets/Desserts

Ingredients:
12-15 Rasgullas,homemade or store bought(at room temperature)
1 liter full cream Milk
3-4 tbsp Condensed milk,optional
2 tbsp Sugar(increase it to 1/4 cup if not using condensed milk)
10-12 Almonds
12-15 Pistachios
12-15 strands of Saffron
1/2 tsp Cardamom powder
few saffron strands,to garnish

Method:
  • Soak almonds in water for 10 mins.Soak saffron strands in 2 tbsp warm milk for 10-15 mins.
  • Cut the soaked almonds and pistachios to small pieces.I used a nut grater to cut the dry fruits.
  • Press the rasgullas gently to remove extra syrup from them and keep them ready.If you are making fresh rasgullas for rasmalai,flatten them up while shaping. Click here to see the whole and detailed process of the preparation of rasgullas.
  • Boil milk in a thick kadai and once the milk comes to a boil reduce the flame and let it boil on low-medium flame.Keep collecting the cream formed on the milk and push it to the sides giving place to form more cream.Continue the process until the milk reduces to half.You need to keep stirring in between else the milk gets burnt at the bottom.This process might take roughly 20-25 mins,so be patient enough to check it at regular intervals.
  • Add saffron soaked milk to the reduced milk and then add condensed milk and sugar and mix it nicely.
  • Now add chopped dry fruits to it and continue simmering until it becomes slightly thick.Check the sweetness and add more sugar if needed at this stage.
  • Add the squeezed rasgullas to the thickened milk and boil it for 4-5 mins.
  • Cool it and refrigerate it.
Serve it chilled by garnishing with more saffron strands and nuts.

Notes:
  1. You can add rose water at the end for a flavorful one.
  2. Use good quality saffron to get a nice yellow hue for rasmalai, you can alternatively add some yellow color to the chenna while kneading for rasgulla.
  3. If you are making rasgulla at home, try to flatten few before they are put in the syrup and also cook rasgullas(for rasgulla) and flattened rasgullas(for rasmalai) separately so that they get cooked uniformly.
  4. If you are using ready rasgullas,let them come to room temperature and then press them gently to squeeze out the syrup and flatten it gently, else they will break if you do with the cold rasgullas.
  5. The addition of condensed milk is optional,but makes the milk more creamy.I added it as I had it at that moment,else use just the sugar.
  6. For a quicker version use full cream evaporated milk and condensed milk in the recipe and you do not need to boil it for longer.Also use store bought rasgullas for the recipe.

Milk Powder Gulab Jamun | Gulab Jamun Recipe

Blogging has taken a back seat as the life has become busy after the arrival of little V as he keeps me busy all day.Though I want to blog regularly it is not happening as I get exhausted by the end of the day.With Holi around the corner I thought I will re-energize myself by posting a festive recipe apt for the occasion.
Coming to the post, Gulab Jamun is one of the most popular sweets which takes its place in any occasion - be it a festival or any other big functions.Gulab Jamun was never a favorite for me during my childhood but that was the only sweet I craved in my pregnancy and no wonder that it has become one of my favorite sweets now.There are many variations to Gulab Jamun like Dry Jamoon, Kala Jamoon etc all of which has a unique taste.Traditionally Gulab Jamun is prepared with Khoya(mawa) which tastes fabulous and today I am posting Gulab Jamun recipe using milk powder which is a good alternative to the traditional Khoya jamun.I would definitely post the other version sometime soon.

Gulab Jamun Recipe using Milk powder:
Yields:20-25 jamuns | Author: Prathibha
Prep time:15 mins | Cooking time:30 mins | Total time: 45 mins

Ingredients:
for jamun:
1 cup Milk powder
1/3 cup Maida/Flour
2 pinches of Cooking Soda
1 tbsp fresh Curds
3-4 tbsp Milk
1 tbsp melted Ghee
Oil/Ghee for frying

for sugar syrup:
1 1/2 cups Sugar
1 1/2 cups Water
10-12 Saffron strands
2-3 Cardamom pods, crushed
Rose essence,few drops or 1 tsp Rose water

Method:
to prepare sugar syrup:
  • Combine water and sugar in a big broad vessel and let it come to a nice boil.Add cardamom powder, saffron strands and rose essence or rose water and let it boil until it becomes thick and reach single thread consistency.Remove any scum from the syrup with the help of a ladle.Switch it off and keep it ready before we proceed to make jamuns.
to prepare jamun:
  • Sieve flour(maida), milk powder and cooking soda together for 2-3 times without any lumps.
  • Take this mixture in a bowl and add ghee,curd and mix with finger tips.
  • Sprinkle milk little by little and mix gently by rotating your hand in one direction to form a smooth dough.DO NOT knead the mixture.You can even use water instead of milk to make the dough.
  • Keep the mixture aside for 5 mins.
  • Divide the mixture into 20-25 equal portions and make them into evenly sized smooth balls. 
  • Deep fry them in a batch of 7-8 balls in moderate hot oil/ghee until it turns dark brown in color. You need to roll them regularly in oil so that the jamuns get nice golden brown color on all the sides.Repeat the process for the other batches.
  • Drain the oil/ghee nicely from the jamuns and let them sit for a minute or two or drain in a tissue paper and then add jamuns to the prepared hot sugar syrup and let it soak for 2-3 hrs.
Serve it hot/warm or at room temperature.You can serve jamuns warm with a scoop of vanilla ice cream.
Notes:
  1. It is important to make smooth dough and also you should not knead the dough.This helps in yielding soft jamuns.
  2. Jamuns double in size ,hence make sure you use a broad vessel for syrup giving enough room for the jamuns to expand.
  3. You can use either water or milk to make the dough, but milk makes the jamuns very soft and tasty.
  4. The oil should not be very hot, it should be moderate hot and also you should fry the jamuns in medium heat by rolling them in between constantly.
  5. You can use even kewra water instead of rose water.
  6. You can even add slivered pistachios or almonds on jamuns while serving.

Baby Corn Pakora | Babycorn Recipes

Last week, I purchased a large quantity of my my favourite veggie, "babycorn" and used them in two dishes which I prepared, Babycorn Bell peppers Stir fry and Babycorn Capcium Gravy . I though saved a few, for making my favorite babycorn fritters (not the usual besan based pakoras) over the weekend.

 I dream about food at times and in one of those dreams , I had a mental note that I would have my sunday evening tea with those babycorn fritters.When I started blanching the babycorns and started preparing the batter, I realized that I have run out of maida (all purpose flour) which is essential for preparing these yummy fritters. I had to hence change my plans and converted them into these beautiful pakoras.These Pakoras look deceptive and look very much like our Mirch Bajjis becauss of their shape.Though I could not make what I wanted, we enjoyed these golden crisps with our cup of tea.I though plan to post those delicious Babycorn Fritters next time I prepare it.

Babycorn Pakora

Babycorn Pakora Recipe:
(Serves 2-3)

Ingredients:
12-15 tender Baby corns
Oil,to deep fry

for Batter:
1 cup Besan/Chickpea flour
1/4 cup Rice flour
1 tsp Red chilli powder
a pinch of Turmeric powder
1 tsp Ginger-Garlic paste
1/4 tsp Garam masala (optional)
a pinch of Asafoetida or 1/2 tsp Carom seeds
1/4 tsp Baking soda
2 tsp hot Oil
Salt to taste

Method:
  • Cut baby corns into 2 pieces lengthwise and par boil them in hot water with salt for 1-2 minutes.Do not boil for long.You can even add a pinch of turmeric powder while boiling them.Drain them and keep them aside.

  • Mix all the items(mentioned under 'for Batter') well and make it into a smooth paste by adding enough water.Add the water slowly and use a wire whisk and whisk to the consistency of thick idly batter consistency and make sure you don't add too much water at once.The more you beat the mixture the better and fluffy the pakoras would be.You should ideally beat the batter for 3-4 mins.

  • Mean while heat oil for deep frying.
  • Hold the tips of baby corns and dip each of them in batter and individually and drop them slowly into hot oil and deep fry them till it becomes golden brown in color on medium flame.

  • Drain them on to a kitchen towel to remove excess oil.
Serve them hot with Imli Chutney/Green Chutney/Tomato Sauce.

Notes:
  1. You can use the same process for making pakoras like Cauliflower,Broccoli and Poblano peppers(remove the seeds) by blanching them in hot water initially and follow the same process.
  2. You can use the same batter as base for all pakora varieties like Potato(cut into thin slices),Brinjal(cut into thin slices),Onion(thin round slices as well as lengthwise) and Capsicum rings.
  3. The addition of garam masala is completely optional,as babycorn is a bland vegetable I added it to spice up the batter.
  4. The addition of rice flour makes the pakoras crisp.
  5. I like to add hot oil to the batter mixture as it will make the pakoras crisp and also makes them consume less oil.Make sure you beat the batter which will makes the pakoras more fluffy.
