Sooji ki Kheer | Rava Payasam | Easy Kheer Recipes

I had prepared Sooji ki kheer along with Kala Chana sundal yesterday to offer to the God yesterday for the 1st day of Navratri.I must say this is the easiest kheer which can be prepared in flat 15 mins.It is not only easy it tastes delicious too at the same time.
This is a simple porridge which is also prepared for babies with out the addition of dry fruits as it is very light and easy on stomach for them.You can even add fruit or vegetable puree like boiled carrot,mango,apple for a variation.
Sooji ki Kheer | Rava Payasam | Semoline Kheer Recipe:
(serves 3-4)

Ingredients:
1/2 liter Full cream Milk(or regular milk)
3 tbsp Sooji/Rava
1/4 cup Sugar
1/4 tsp Cardamom powder(optional)
8-10 Cashewnuts,split
2 tbsp Raisins
1 tbsp Ghee
Method:
  • Boil milk and simmer it for sometime until it is thick.You can even reduce the milk by boiling for some time or use it once it is boiled.
  • Heat ghee in a thick bottomed kadai and add cashew nuts and fry them until they are golden brown in color,remove them and then add raisins and fry them until they plump up.Remove them and keep aside.
  • In the remaining ghee add the rava and fry on low flame for 2-3 mins until the rava gets nice aroma.
  • Now slowly add the milk by stirring the mixture continuously.You need to be very quick in doing this process,otherwise it will turn lumpy.
  • Add sugar to it and cook for 4-5 mins over low flame.
  • Add cardamom powder,roasted cashew nuts and raisins and give a mix.
Serve it hot/warm/cold or at room temperature.
Notes:
  1. This kheer tends to thicken up as it cools down but still it stays soft for long time.If you want you can add 2-3 tbsp milk to each portion and mix before serving.
  2. You can add few saffron strands soaked in milk to the kheer while it is boiling to get the light hint of saffron color.
  3. Dry fruits like almonds,pistachios can be added to the kheer.Almonds can be chopped into tiny bits and fry them in ghee and you can add chopped pistachios directly to the kheer.

  10. Tum ne mom ki yaad dila di yaar...this kheer is my mom's signature recipe.....even now my friends carve and talk about the kheer made by mom.....kheer looks scrumptious.....
